Loved this easy and inexpensive dish. I must admit I've never had Carolina Red Rice but will certainly be enjoying this dish again- it's so open to variations. I also made it a main meal so used 1lb of sausage. As suggested in the intro I added paprika and cayenne. I had to cook the rice separately as I realised it wouldn't all fit in my pan! Using extra lean sausage, this was a total of 18 Weight Watchers points for the whole recipe. Thanks so much for this lovely meal!

Not even close to true red rice. Came out more like jambalaya. Sorry, but was glad I had some slw to save the meal.

We wanted to make this a main dish, so we used a whole pound of Spicy Cajun Chicken Andouille sausages. We also had to use quinoa, since we were out of brown rice. The rice didn't seem to get cooked. I'm thinking next time I'll use the brown rice and cook it first and then add the rest (after it's been cooked too). Will definitely try again, with those changes. The taste was good though.
