This is a recipe that my husband's family just loves. It is so good. It is a really quick appetizer to make (but a bit messy). Everyone just devours them. Good to double or triple.

  1. Microwave onion and chopped mushroom for 2 minutes on high.
  2. Stir and cook a bit longer.
  3. While hot, mix in cream cheese.
  4. Add bacon.
  5. Spoon into mushroom caps.
  6. Sprinkle freshly grated parmesan cheese on top.
  7. Cover with foil.
  8. Bake 20-30 minutes at 350 degrees.

I had no mess with these, I put the mixture into a pastry bag, and filled the caps. These turned out just great, BF raved on the first bite. I actually had an odd number of mushrooms, so I ended up with extra filling. I used the extra filling, and added some twice baked potatoes to the menu, they were YUM as well. Great little recipe here, that I will definately make the next time we entertain some company.

this is an awesome dish, and so very simple. Expect to be in the kitchen a long time with this, but once the bacon was cooked it all came together in a snap and was done even faster. This is a must for all mushroom lovers!

Actually I made these a few weeks ago as a side to our low carb diet. These little morsals are amazing. I will admit to they are a bit messy to make but worth the effort. Since it was just my husband and I we had some left overs that he took to work. He shared with a co-worker who immediately e-mailed me for the recipe.
