I found this recipe on a cooking show by Michelle Wilson titled "Low Fat No Fat Recipes." Carob is sooo much better for you than chocolate. Still, these cookies taste distinctly like carob, so they are really for carob lovers.

  1. Preheat oven to 350 degrees.
  2. Place banana, dates, soy milk or water, vanilla, & salt in blender & mix until smooth.
  3. Put oats, carob chips & walnuts in a large bowl & mix.
  4. Add blended mixture to bowl & mix well.
  5. Form into cookies.
  6. Bake for 25-30 minutes.

Wonderful cookies! I used almond milk instead of the soymilk or water. Everything else was the same. The batter is wet, but don't let this worry you. I used a cookie scoop, and they were delicious. The only change I will make is to grease the cookie sheet. Thanks for the recipe!!
