I omitted the squash and used sliced mushrooms and garlic with the other vegetables and sauteed them in butter which I prefer to use in cooking. I didn't have white pepper so I used freshly ground black pepper and I added some dried oregano, thyme, rosemary and sage. Very tasty couscous dish and so very versatile. I enjoyed some of this for today's take-to-work lunch and it was very good at room temperature so a good way to get some vegetables into my lunches! :) Made for 1-2-3 Hit Wonders.

I scaled this back to use 3/4 cup of couscous which was plenty for 3 of us. I just loved the mix of vegetables through the couscous, I used zucchinni, red and yellow capsicum/bell peppers, celery and some fresh brocolinni picked from the vegetable garden and sauted them in some olive oil and then mixed through the cooked couscous, delicious and healthy. thank you weekend cooker, made for Everyday A Holiday.

Great dish! I accidentally got pearled couscous which was good, but I will definitely make this again with regular couscous. I used about half the margarine called for to saute the veggies. Great side dish with grilled chicken - thanks for sharing the recipe!
