Carne Rellenos

"This is an easy southwest style flank steak recipe using your crock-pot. I served this at a dinner party for friends and the flank steak came out very tender and flavorful. It was a hit. I found this recipe in my Rival Crock Pot recipe book."

• 113.39 g can mild whole green chilies, drained
• 113.39 g cream cheese, softened
• 1 flank steak (about 2 pounds)
• 354.88 ml salsa verde (green salsa)

directions

1. Slit whole chilies open on one side with sharp knife; stuff with slices of cream cheese.
2. Open steak flat on a sheet of waxed paper. Score steak and turn over. Lay stuffed chilies across unscored side of steak. Roll up and tie with kitchen string.
3. Place steak in crock-pot slow cooker. Pour salsa verde over steak. Cover and cook on low 6 to 8 hours or on high 3 to 4 hours or until meat is fork tender.
4. Remove steak and cut into 6 pieces. Serve with sauce from crock-pot.

Made this for the second time tonight. It was delicious and really spicy since we put jalapenos inside. Made a sauce by blending the juices with sour cream to mitigate the heat and xanthan gum to thicken without adding carbs. Thanks for this!

No flank steak when I shopped, so I used a top round. I pounded the steak flat rather than scoring it, then wrapped and tied. The flavor was good, but mine was falling apart when I served it, rather than slicing into nice, pretty rolls. I don't know if it is because I had to use a different cut of meat or what. I also mistakenly used chopped green chiles. That worked fine and seems like it would be easier than trying to stuff those slippery canned whole green chiles. A nice unique recipe for the crock pot.
