Made this for the second time tonight. It was delicious and really spicy since we put jalapenos inside. Made a sauce by blending the juices with sour cream to mitigate the heat and xanthan gum to thicken without adding carbs. Thanks for this!
No flank steak when I shopped, so I used a top round. I pounded the steak flat rather than scoring it, then wrapped and tied. The flavor was good, but mine was falling apart when I served it, rather than slicing into nice, pretty rolls. I don't know if it is because I had to use a different cut of meat or what. I also mistakenly used chopped green chiles. That worked fine and seems like it would be easier than trying to stuff those slippery canned whole green chiles. A nice unique recipe for the crock pot.
