Soup
- 1 lb bacon, cut into 1-inch pieces
- 2 lbs sirloin tip steaks (I use the thin sliced sirloin and while still partially frozen, slice it into 1-inch pieces) or 2 lbs top round beef, sliced thinly and into 1-inch pieces (I use the thin sliced sirloin and while still partially frozen, slice it into 1-inch pieces)
- 2 (28 ounce) cans tomatillos (large cans, do not drain)
- 1 cup cilantro stems, and leaves
- 4 garlic cloves
- salt
- 30 ounces canned pinto beans, rinsed and drained

- fresh lime
- sour cream
- diced onion
- chopped cilantro

directions
- Brown the bacon in a large dutch oven. Add the beef and cook until brown (leave the bacon grease in the pot).
- Blend the tomatillos in your food processor and strain well to remove the seeds. Add about a cup of the tomatillo liquid back into the food processor and blend with the cilantro, and garlic.
- Add the tomatillo/cilantro/garlic sauce and the rest of the strained tomatillo liquid to the beef and bacon. Add salt to taste.
- Stir in pinto beans and bring to a boil. Reduce heat and simmer until beef is tender, about 1 hour.
- Ladle into bowls and serve with fresh lime, sour cream, diced onion and cilantro as garnish.
- Serve corn or flour tortillas on the side.

I love carne en su jugo! This recipe as written is about a 4, but to make it a solid 5, I added some serrano chiles (about 2 or 3) and a diced up onion in the tomatillo, cilantro, garlic blend, blended all of it together. I just used a regular pan to cook the bacon and beef. I also added beef broth to the entire thing to make it more like a soup. I used every recommended garnish but added my favorite part of it all, FRESH AVOCADO!!! You won't be sorry!

This was excellent! I halved the recipe since there is only two of us. I did cook it on low for a few hours to get the beef really tender. I was unable to find canned tomatillos so I used salsa verde instead. To reduce the fat, I trimmed the bacon fat but was left with enough bacon fat to brown the meat nicely.I served it with limes,sour cream and corn tortillas. This was really delicious and I will definitely make this again. Thanks SoozieQ!

I grew up in Tucson but moved to Colorado in 1989 and live in a household with my husband, Dad, daughter and 3-year old twin granddaughters. Our 8-year old grandson spends 2 nights a week with us. All of that adds up to often difficult menu ideas to met everyone's tastes.

I like to find recipes of people that I see are still active on Zaar and love it when I hear back from the Chef after I review the recipe. Everytime someone reviews one of my recipes, I like to find one of theirs to make and review as quickly as possible. It's a way for me to find great chefs I don't know yet too!
My husband has high blood sugar so we try to watch our carbs, but it is not easy because we love them so much!
I was diagnosed with brain tumors in 2005 and so far have had 5 surgeries that have left my eyelid droopy. I hope to have a surgery that will correct that soon!! There is still one tumor they have not removed but my wonderful doctor James Garrity at the Mayo Clinic in Rochester MN says they will leave it alone until or if it ever causes problems!
