This is a great recipe for many reasons! I make a similar recipe, but it is ore tomato based and has a lot more spices, and I make it in the oven. When I was making it, I was itching to put in some chili powder and cumin, but I decided to leave out the spices and make it the way it was posted. I am glad I did! First of all, it is really tasty just as it is! My son gave it thumbs up! And the other reason is that it is such a great base recipe! I can see taking it in all kinds of directions. I was thinking that sweet potato and chicken would be great to add, also some greens like spinach or chard, and even pineapple would be great!
