Pretty good. Ours marinated for almost an hour and still it didn't seem very "jerky" to me. Maybe because I've had that spice mix for about 4 years... hmm. Think it's lost its potency?

used Kaffir limes for the juice and dry Rub-A-Dub-Rub (www.sunnycaribbee .com) in lieu of jamaican jerk spice; was excellent and simple.

These tuna steaks were delicious. The marinade was tart and spicy which was a great compliment to the tuna. The meat was tender and juicy. Made for a delicious barbecued meal. Thanks Nurse Di.
