Missey Wombat this is 5 star all the way. It is simple to prepare, tastes fabulous and the presentation is impressive. When I put the onions, red pepper & cilantro on the fish filet I arranged them in artistic designs so when I served them they looked so beautiful - much oohs & ahs. The cilantro gives that extra flavor & I used a whole HOT red chili pepper finely chopped. Served with a wedge of Lime on the side. I also seved Garlic mashed potatoes, carrot & turnup combo and fresh asparagus baked. Oh yes I used Pickeral filets. I think this recipe would be wonderful with Halibut too. We made this with fresh snapper and it was very easy to make, and the fish was very good. It didn't smell up the house (which is nice)! We thought the fish by itself was a little bland, but when a bite included the 'toppings' was fine. Will maybe try to add some seasonings next time as well (cumin? chili powder?). Not sure if this was truly Caribbean flavor, but it was good!
Delicious - I used Tilipia but think this will be wonderful with any thin mild fish filet--even my ds who doesn't like fish liked the fish cooked this way! Thanks for sharing this keeper which we enjoyed with tossed salad and baked potatoes.
I have to give this fish recipe a higher rating than MY version deserved, only because my frozen fish fillets had probably seen better days. Other than the fish, the flavor of the juice around the fish and presentation of this dish were excellent. I used dried cilantro and mixed it with the lime juice and 5 dashes of tabasco, then poured over the fish and veggies. I sprinkled w/salt and pepper last and I think maybe it would have been better if I would have sprinkled a little directly on the fish first. I can't wait to try this recipe again with a *better* tasting fish!
