Cardamom Glazed Carrots

From Cooking Light magazine. I'm usually not very successful glazing carrots, but these were great!

  1. Cut a circle from parchment paper to fit a large nonstick skillet.
  2. Heat skillet over medium heat. Add butter and oil to pan. Swirl until butter melts. Add ginger and cardamom to pan; cook 2 minutes.
  3. Add 1/2 cup water, sugar and carrots. Bring to a boil.
  4. Cover with parchment circle, reduce heat, and simmer 9 minutes until carrots are crisp-tender.
  5. Sprinkle carrots with salt and pepper.
