  • 1 pint strawberry
  • 1 lb Baby Spinach
  • french brie cheese
  • For Dressing

  • 2 tablespoons Dijon mustard
  • 1 tablespoon honey
  • 14 cup balsamic vinegar
  • 14 cup virgin oil
  • 1 cup chopped pecans, toasted

directions

  • In a bowl mix in dijon and honey.
  • wisk in olive oil slowly streaming inches.
  • wisk in vinegar slowly streaming inches.
  • stir in pecans.
  • pour over spinich and strawberries.
  • toss together.
  • lay few slices of brei on top of the mixture.
  • and enjoy.

This vinaigrette was really delicious when prepared as is, but to cater to my audience, I took it in a sweeter direction and added about a loose 1/4 cup dark brown sugar and a small chunk of sweet onion. (I also served it with a side cup of raw sweet onion if they wanted to add it to the salad.). If one wanted to up the sweetness a little more, I would think candied pecans would be a good add. And bacon. Or candied bacon. Just because bacon. :) (Of course, this all depends on the sweetness of the strawberries. Mine were not very sweet and needed the additional sugar, but this can be easily adjusted to personal taste.)
