Caramelized Plantains

"Same idea as caramelized (candied) apples and just as scrumptious. The recipe came from a magazine with typical recipes of the Mexican state of Tabasco."

  • Cut peeled plantains in thick wedges or slices.
  • Fry plantain in hot cooking oil for 2 minutes, drain, and set apart.
  • Mix sugar and vinegar and cook on stovetop to hard ball stage.
  • Dip plantains in cooked syrup or pour syrup over them.
  • Let cool and serve.

  1. These are WONDERFUL!! Of course, they're more like candy than produce, but that works for me! Pretty easy to make, too, just resist the strong temptation to lick the spoon (that would be seriously painful!). Another winner in my book, Mexi-Rosie!

I am a 53 year old Mexican-American elementary school teacher. I enjoy reading biographies, intresting nonfiction, and also love all types of catchy upbeat music. My favorite cookbook is the "Kitchen Fair" trademark cookware recipe book in Spanish. Being bilingual and bicultural, I've come to appreciate the best of both U.S. and Mexican cuisine. I was pleasantly surprised that many, many zaar members include Mexican food as their first favorite food.
