Caramelized Onions With Apples and Carrots

  • 1 teaspoon canola oil
  • 1 medium onion, peeled and thinly sliced
  • 1 apple, peeled, cored and thinly sliced
  • 2 carrots, peeled, trimmed and thinly sliced
  • 14 cup water

directions

  • Place the oil and onions in a medium skillet. Cook slowly, stirring occasionally, over medium-low heat until brown, 15 minutes.
  • Add the apples carrots, and water. Cover and continue to cook slowly until the carrots are tender, 5 to 7 minutes.
  • Puree some of the onion mixture in a blender or food processor for the baby and serve the rest as is to your family. Makes 2 cups.

  2. I too found it a bit on the dull side, but still pretty decent. I added some apple juice as another reviewer suggested doing and that helped the dish out. I did not think carrots and apples and onions would play nicely together but all in all it was a pretty good side dish. Also I did not use the puree version of this.
     
  3. My DH loved this I didn't bother to puree it, I did use a couple tablespoons butter in place of oil, and lots of black pepper, thanks hon!...Kitten:)
     
  4. The youngest baby here is 13 years and 6'3" so there was no mashed version here. I liked the combination of veggies but found the flavors on the dull side. The addition of some salt, pepper and fresh thyme brought it to life and ready for the dinner table. The one thing that reallyy surprised me was that even the small amount of oil used left the finished onions tasting a bit oily. Next time I might start with less and add apple juice or water if the carmelization gets too dry. Thanks!

I am a Christian wife and mother of 3 kids. Since my DH's high cholesterol, we've been eating better. I never used to like cooking. Since eating better, I've liked learning and preparing new recipes. My kids haven't reconciled themselves to the new eating yet. I grind my own grain and make all my own breads.?Working 2 hours a day in the local high school lunch room.??I am homeschooling my high schooler.? ?Also found out 1 child has multiple food allergies (wheat, dairy, tomato, chocolate, etc) and another is gluten sensitive. So, we just started (July 09) eating gluten and dairy free. I've been busy with getting our house market ready, even though it's not the best time for that.?
