  • Put the onions in the bowl with the fat or butter. Cover the bowl and microwave for 10 minutes on high.
  • Take off the cover, and stir the onions--there should be good bit of liquid in the bowl. Microwave (uncovered) for approximately 10 more minutes, but keep an eye on it. It should get brown around the edges, so stir it periodically.
  • Eventually it'll be a brown mass of onions. If you like them crispy, microwave them a bit longer but, again, keep an eye on them--it's a real short moment between crispy and burnt.
  • You can do this in a conventional oven too, but it takes longer; say around 20 minutes at 350°F with the cover on and another 20 min with the cover off, stirring periodically. Once again, keep an eye on it.

  1. 3 medium onions made a very tasty part of a meal for 3 persons. The recipe ingredients reads "20 butter" and "onions" but doesn't say how many. I used about a 1/2 C. butter and 3 medium onions & it worked out fine and the cooking time seemed to be the right time. 3 med. onions would serve 4 people. They would be really yummy atop a thick juicy filet mignon! In fact, I believe that this recipe could be included with a large number of meals of various types.
     
  2. I used one stick of butter,4 onions and 1 pound fresh mushrooms,sliced.Plus liberal amounts of salt and pepper.Then served them over the top of grilled chicken.Yummy!!

  4. No this is not the traditional recipe - it is MUCH better!<br/>Usually it is so easy to burn the onions. With the butter - when the water is boiled off the onions fry not burn.<br/>My new standard!
     
  5. 2 large red onions, chopped 1tsp demerara or soft brown sugar ½tsp dried thyme ½tsp mace ½tsp smoked paprika ¼tsp dried rosemary ¼tsp mustard powder Couple of grinds of salt and pepper to taste ? cup butter ? cup extra virgin olive oil Microwave, top on, for 5 min, stir, repeat, stir, microwave withe lid loose (so the evaporating liquid doesn't splatter everywhere), stir. Microwave 2 min with the lid off completely, stir, repeat, stir. It should only be the fats and oil left, which has also absorbed the spice and herb flavorings. Microwave with the lid off for a final 2 minutes and stir. It should look almost like onion jam of you've chopped the onions finely enough. I served it on crispy baguette with coleslaw with seeing of choice and a bratwurst. Delicious.
