From Southern Living Slow Cooker cookbook.
- 2 sweet onions, extra large, peeled
- 1 (10 1/2 ounce) can beef broth, undiluted
- 1⁄4 cup butter, cut into small pieces
- Cut onions in half lengthwise; cut each half crosswise into 1/2 inch thick slices.
- Place onion slices, broth and butter in a 3 1/2 quart slow cooker. Cover with lid; cook on high 8 hours or until golden, stirring after 4 hours.
Delicious! I did use vegetable broth and used them with rice. Thanks!
