  • Heat a 10 inch nonstick skillet over medium heat.
  • Cook onions and sweet potatoes in oil about 5 minutes, stirring occasionally, until light brown; reduce heat to low.
  • Cover and cook 10-12 minutes, stirring occasionally,until potatoes are tender.
  • Stir in brown sugar and jerk seasoning.
  • Cook uncovered about 3 minutes.
  • Sprinkle with parsley.

  2. This was very easy and delicious. I doubled the jerk seasoning and used half an onion instead of a quarter and threw in a little minced garlic. I served it with pork roast and green beans. Thanks for a unique and very tasty recipe.
     
  3. Delicious! I went heavy on the jerk seasoning and added garlic.
     
  4. I took the suggestions of the other reviewers and also doubled the jerk seasoning and used a half of a large onion. These were delicious and since I am trying to watch my carb intake, they were wonderful!
