Caramelized Sweet Potatoes & Apples

  • Melt butter in an oven safe casserole.
  • Add the brown sugar and cinnamon.
  • Mix well.
  • Add the apples and potatoes.
  • Stir well to thoroughly coat with the caramel mixture.
  • Cover with a lid or foil and bake at 375 for 30 minutes, stirring once halfway through.
  • After 30 minutes, remove the cover, stir again, and bake for 10 more minutes, or until caramel is thickened and the potatoes are tender.

  1. This is wonderful!!! I made it for Thanksgiving dinner, and had no leftovers. I did check them at 40 minutes and baked about 30 minutes more. I am not sure if it was because my chunks were to big, or my oven was off. I smells a little like apple pie when baking so that was a plus too. We will be having this one often. I got requests to make it for Christmas dinner too.
     
  2. This is a delicious and flavorful way to prepare sweet potatoes. The tart apples add a nice flavor to the dish. I used 4 quite large, very tart apples (instead of the 2-3)and did NOT increase the amount of sugar and it was still sweet enough -- and added a little more flavor. A keeper!
     
  3. This was like having dessert as a side dish. I was surprised that 2 T of butter and brown sugar (I made 1/2 recipe) was so effective at carmelizing all that sweet potato and apple. Delicious! I'm filing this under dessert.
     
  4. Wonderful dish that was a hit with company. Used 2 potatoes and 3 apples. Next time will do 3 and 3 so it isn't quite so sweet.
     
  5. Its in the oven, off to find a pork chop recipe now, will come back in rate after tea. Sounds good though.

I live in Minnesota, and actually like the winter more than summer! (Must have Siberian ancestors!) The main focus of my life is, and always has been, children. I've spent the majority of my life either educating myself about children, having and raising children, or working with children. I presently work in an elementary school with children that have emotional/behavioral difficulties, and have three daughters of my own. I also have four grandsons (one an extra gift that came when my daughter very wisely married his dad) and will become Grandma to the the 5th baby in June. This one a little girl! I can not wait!! I received so much joy being a mother that finding that much joy, and more, in being 'Grandma' has taken me by surprise. They are all the best gifts ever given to me. Whatever free time I have is spent with my nose in a book, surfing the web for new recipes, or with my wonderful friends, both online and "in person".
