Caramel Truffles

"This comes from the new Taste of Home. Haven't tried them yet, but want to post them to save the recipe on Zaar!! I love truffles, so will be making them for my gift trays this season. Cooking/prep times are approximate due to chilling, etc."

  • Line an 8 inch square dish with plastic wrap and set aside.
  • In a microwave safe bowl, combine the caramels, milk chocolate chips and cream.
  • Microwave, uncovered, on high for 1 minute; stir.
  • Microwave 1 minute longer, stirring every 15 seconds or until caramels are melted and mixture is smooth.
  • Spread into prepared dish; refrigerate 1 hour or until firm.
  • Using plastic wrap, lift candy out of pan.
  • Cut into 30 pieces, rolling each piece into a 1 inch ball.
  • Cover and refrigerate for 1 hour or until firm.
  • In microwave safe bowl, melt semisweet chips and shortening; stir until smooth.
  • Dip caramels in chocolate and place on waxed paper-lined baking sheets.
  • Refrigerate until firm.

  1. I love the Caramel it is DELICIOUS! One problem I had was I used waxed paper to line the dish for it to set up; BAD IDEA! I'm going to make again and this time I will use the plastic wrap as the directions say. I think it will work better. Thanks for the recipe! This is now one of my favorites!
     
  2. I am editing my first review b/c I made these again.Absolutely fabulous!!!!!!!!These are so good I could eat the whole batch!!!! The first time I made these, I had problems with the cararmel mix getting soft almost immediately after I took it out of the fridge. I had poured it onto a cookie sheet and it was really hard to cut and get rolls and as fast as I rolled them and put them on the tray, that's as fast as they would settle into caramel "disks". I didn't end up with round truffles but chocolate covered caramel disks. They still taste unbelieveably good though!! I did end up sticking them in the freezer to keep them from spreading out any more than they did. I dipped them in milk chocolate due to personal preference. The second time I made these, I poured them into a wax paper lined 8 inch baking dish (like it says to) and they turned out great! I actually had trouble getting them to roll into balls b/c the caramel was so firm. LOL! What a difference a pan makes. I had a few that I left in a square shape and they looked like the ones you get in a store bought candy box. I just loves these and will be making them often.
     
  3. i hate giving recipes a bad review, but save your time and go buy a bag of rolos. these were pretty bland, and kind of grainy.
     
  4. These little treats were great! I did use dark chocolate to dip the candies in but that is the only change I made. I would caution you to work rather quickly with dipping the caramels, I was half way through, then had a few moments of distraction and the caramels sat on the counter a little too long and started to get a little soft. I just popped them back into the fridge for a minute and then finished dipping. After they chilled a few minutes in the fridge, I took them out and drizzled each one with some more chocolate and they looked so professional! I boxed them up and gave them as treats to some co-workers. I will be making these over and over because they are easy and SOOOO good!
     
  5. These tasted great but I originally gave this recipe 3 stars because when my truffles hit room temperature they got all squishy. This may because I rolled them in coconut instead of dipping them in chocolate, which would keep them together? Another tip I received from the chef- you can buy caramels that aren't individually wrapped.

FYI...I used to be Earnhardt#3 on Zaar, so I'm not a newbie!! This picture is of me and hubby in Hollywood in August of 2006. If you really look, you can see the sign waaaayyy back there behind us! Don't I look like a star in my shades?? ;) I live in a town of about 1500 and work at an insurance office here in town. I am married with a 13 year old daughter, a 32 year old stepson and, as of Dec 11, 04, a daughter in law. They now have a one year old daughter, Natalie. She's a sweetie! I love NASCAR!! Root for Tony Stewart. Ya I know, alot of people don't like him, but love the bad boy attitude!! We go to a couple of races a year; love it!! I confess...I'm a redneck!!! I like to read, cross-stitch and I love to cook when the weather turns cool. I love music, mainly country and classic rock. I love to sing, too, but nobody else would enjoy it, so I keep that to myself!! I love to go out with girlfriends, have a few drinks and dance the night away. I like to ride my bike and walk when the weather is warm. I love the outdoors and would rather work in the yard anytime than in the house. My daughter plays on a traveling softball team in the summer, so that keeps us busy about every weekend. Actually, they practice most of the year, so we're never too far from a softball field!! She also plays softball at school, so we go from one team to the next! I love it and will miss it when she's too old to play! She pitches and plays 1st base. Her new coach is going to try her at third this year, so that will be something new for her. I LOVE any kind of animal, especially dogs, and am very concerned about animal welfare, especially Greyhound rescue. The retired racers go through so much and are so appreciative when they finally get to go home with someone! If I had the time & the cash, I would run away to a tropical island. There's nothing better than swaying palm trees, balmy breezes and turquoise water. I love to wake up in the morning and hear the waves crashing. A cold margarita isn't a bad addition, either! I LOVE dogs; I have really grown to love Greyhounds; what personality!! We adopted Missileman on May 15, 2006; a great birthday gift for me!! He is a retired racer, but now seems happy just to be a dog! We also have a 5 year old yellow cat, Drew. A real troublemaker! We also have a 5 year old Black Lab named Angus. He is actually my stepson's dog, but it seems we're his permanent family! We also have an adopted fur baby, Tanner. He actually belongs to the neighbor, but he loves us and visits everytime he escapes!! There are three things I want to do before I die (well, more than 3, I'm sure, but...) I want to visit Hawaii and Australia and I want to swim with dolphins. My pet peeves are two faced, backstabbing people. And, people who only want to be a friend when you can do something for them. Those people may as well stay away from me; life's too short to deal with 'em!! I've "met" alot of interesting people here at Zaar and can't wait to see what's going on every morning when I log in!! I've been in a few swaps over the last year and had a great time!! I appreciate everybody who organizes them; it's alot of work!!
