Caramel Layers

"My grandmother always had several types of cookies waiting for us when we came to visit and these were one of them. They are delicious and were one of my favorites. Do not double this recipe! Grandma has a note written on the recipe card and I remember doubling it a long time ago and it turned out badly."

  • Preheat oven to 350.
  • Sift or whisk flour, baking soda and salt together. Mix in the oatmeal and brown sugar. (I usually use old fashioned oats). Cut in butter with a pastry blender until particles are fine. Reserve 1 cup mixture for top.
  • Press remaining mixture in bottom of a greased 8x8 pan. Bake at 350 for 10 minutes, cool.
  • Combine caramels and milk in the top of a double boiler and melt caramels over boiling water. Blend in remaining 2 T. flour and mix well.
  • Spread caramel carefully over the cooled crust and sprinkle with the chocolate chips. Crumble reserved oatmeal mixture evenly over the top, pat crumbs down gently.
  • Bake at 350 for 12-15 minutes or until delicately brown. Cool completely and cut into bars.

I have loved to cook since I was little and was always perusing cookbooks. My first cookbook was the Winnie the Pooh Cookbook when I was 5! And now I have an abundance of them but not a lot of time to cook. I try to cook healthy meals but I love to try new techniques and especially love baking.
