Caramel Frosting for Angel Food Cake

"This is my family's traditional angel food cake frosting. It is so very rich that it may be complete overkill on a sweeter, heavier cake. My grandmother made many a birthday cake using this recipe. In fact, the photograph that I have included is from my older brother's 2nd birthday in March 1961!"

  • Melt the butter in a saucepan and then add the brown sugar.
  • Boil and stir for at least one minute.
  • Take the saucepan off the heat and add the milk.
  • With a hand mixer beat in the powdered sugar, one cup at a time until the spreading consistency is right for you.
  • It should not be a very thick consistency for angel food cake, because it will harden as it cools.

  1. I made this for a brown sugar angel food cake also found on this site. A wonderful combination! I wanted more of a glaze, so only used 2 cups of powdered sugar. The consistency was perfect. It poured easily while warm, but made a nice firm glaze when cooled.
     
  2. This recipe was great! I used the it to frost mini chocolate cupcakes. As I am vegan I susbstituted in Earth Balance and soy milk and it tasted divine. I also put it in the fridge for a bit to make sure I would not have a problem with the consistency and it turned out great! Thanks so much Mercy!
     
  3. This is creamy and so, so sweet. I am not sure it is the icing I would use for an angel food cake again but I think I would try it on a chocolate cake. The brown sugar flavour would complement the chocolate very nicely I think. If you are using this on angel food I would suggest keeping the icing quite thin so that you can just pour it over and have a very thin coat. It just seemed a bit heavy on the angel food. I know I will try it again. Thanks for the recipe.
     
  4. So easy, so sweet. I wouldn't use it on anything other then an angel food cake as it would be too sweet. I only used 2 cups of powdered sugar.
     
  5. This was a absolutely wonderful tasting frosting - and very easy! I also mixed in Heath Bar bits - delicious.
