serve with chunks of apple, banana and peaches for dipping
- Place sugar in a small heavy pan and add 3 tbsp water. Heat gently until the sugar dissolves.
- Bring to boil and cook until the sugar becomes a deep golden colour.
- Remove from heat and carefully add the cream and lemon zest.
- Stir over a gentle heat until smooth and leave to cool.
