Directions

  1. Place sugar in a small heavy pan and add 3 tbsp water. Heat gently until the sugar dissolves.
  2. Bring to boil and cook until the sugar becomes a deep golden colour.
  3. Remove from heat and carefully add the cream and lemon zest.
  4. Stir over a gentle heat until smooth and leave to cool.
