Caramel Butter Brie

"This makes a wonderful sweet/salty appetizer to spread over crackers. Once you cut into this the soft cheese kind of oozes out and its fabulous to spread over apple slices also."

  • Preheat oven to 350 degrees.
  • Melt butter, brown sugar and white sugar in heavy saucepan over low heat and stir until sugars are dissolved.
  • Gradually whisk in heavy cream and continue whisking until smooth.
  • Add nutmeg.
  • Bring to a boil over medium heat and cook for 5 minutes.
  • Place wheel of Brie on a pie plate and pour caramel over the top, letting it drip down the sides.
  • Bake for 10 minutes or until Brie is soft.
  • Remove from oven and sprinkle with toasted pecans.
  • Let stand 5 minutes before serving.

Living in the south we are very lucky to have an abundance of fresh seafood and other ingredients at our disposal when trying new recipes. My husband and I both love to cook and have learned a lot about cooking from our native Louisianian, Paul Prudhomme (we learned to be very careful with his recipes as they are very spicy - even for us), native New Orleanian, Frank Davis and transplanted Emeril Lagasse. It would be very difficult to pick an all time favorite cookbook since I have approximately 200. I enjoy collecting local cookbooks as well as others from different areas. This picture is obviously when DH and I got married. I cooked all the food and even made my wedding cake.
