  • Have apples at room temperature.
  • Wash and dry apples and stick wooden skewers into the stem end of apples.
  • Butter a large cookie sheet.
  • Combine sugar, corn syrup, cream, and butter in a large sauce pan.
  • Stir to mix.
  • Cook over low heat, stirring until sugar dissolves.
  • Do not stir after syrup starts to boil.
  • Cook to very hard ball stage, without stirring.
  • Add vanilla.
  • Dip apples into syrup.
  • Then hold upright and turn so syrup covers the apples all over.
  • Work very fast.
  • Set the apple on a greased cookie sheet to cool.
  • Roll the lower half of each apple in coarsely chopped nuts, if desired.

  1. Did not care for the flavor of this. It had too much of the dark corn syrup flavor - not a caramel flavor. Also, the color was not a pretty, dark caramel color. It was more of a white/cream color. I won't make this again.
     
  2. These were so good! I was a little worried at first because it smelled like dark corn syrup, but as it cooked it lightened up and tasted delicious. It was sticky and chewy and oh, so thick, but it was good! I tasted a little of the spoon after I made the apples and it made me wish I hadn't already started soaking my pan because I could've eaten the caramel right from the pan. Two comments on the instructions - my mixture wouldn't boil on low so I turned it up almost to medium. I chose this recipe because all the others required stirring for about 30-40 minutes and this one said not to stir, but I wish I would've have known about how long it would take to get to hard ball stage (Mine cooked about 45 minutes - 1 hour I think). I just wasn't even sure when I should check it so I checked it many times. It was so thick it wouldn't run down the apples to cover, so I just spooned it over the top, but I wish I had had more apples and bigger apples to do. I think I will buy more apples and make this again soon.
