  1. Bake potatoes until done.
  2. Cut in half lengthwise.
  3. Scoop potato out of skin.
  4. Mash potato with margarine, sour cream and milk.
  5. Stir in crab meat.
  6. Put mixture back into skins.
  7. Sprinkle with cheese and parsley.
  8. Broil until browned.

These potatoes were easy to make and tasted absolutely delicious!! I baked them in the microwave (just till they were a little soft). We added bacon bits on half of them and it tasted great. My kids even ate them and begged for more. I will definitely make these again...thanks for sharing this great recipe!

Made for PAC, Spring 2007 ~ Had unexpected guests the other night, so I used LARGE potatoes & added an extra can of crabmeat, stretching this to almost 10 servings! These were very tasty & a nice change from the more usual twice-baked potatoes!
