Caprese Chicken Wraps

From Southern Living. Great recipe to use up left over rotissiere chicken. This would also be good as a panini on the George Foreman or a panini press.

Nothing to complain about here LOL. I love all these flavors and was able to use tomatoes and basil from my garden! Wrapped one in a flour tortilla for my 3 year old and he loved it too. I used some balsamic vinegar in this also because I ran out of white wine vinegar, I think the combination turned out really well. Made for Please Review My Recipe tag game.

  1. Combine first 4 ingredients in a large bowl, stirring with a whisk. Add lettuce and next 4 ingredients (through tomatoes), tossing to coat.
  2. Heat a large nonstick skillet over medium-high heat. Coat pan with cooking spray. Working with 1 flatbread at a time, cook bread 1 minute on each side or until toasted. Rub 1 side of each flatbread with cut sides of garlic. Arrange 1 1/2 cups chicken mixture in the center of each flatbread; roll up.
