Cappuccino Cream Parfaits

Even as a child coffee was one of my favorite flavors in a dessert. Came across this recipe in one of the magazines you pick up at the supermarket. Posting here for safe keeping. According to the publication, these are 240 cal/0g fib/2g fat or 5 points. Cooking time stated is really chilling time.

Ingredients Nutrition

  • 1 (7/8 ounce) package fat-free sugar-free vanilla pudding mix
  • 34 cup nonfat milk
  • 14 cup strong coffee, cooled or cold
  • 2 cups fat-free whipped topping (a la CoolWhip Free)
  • 8 -10 chocolate wafer cookies, crushed about 3/4 cup total
  • 14 teaspoon rum extract (optional) or 14 teaspoon brandy extract (optional)
  • 14 cup fat-free whipped topping (optional)


  1. Crush the cookies using a mini chopper or by rolling a pin over the cookies. If you do the later, save cleanup time by putting the cookies in a plastic bag.
  2. In a medium bowl combine the pudding, milk and coffee. (Add the extract if using.) Whisk together to make sure their are no lumps and the ingredients are well mixed. Fold in the whipped topping.
  3. Take 1/2 the cream and place it in the bottom of four parfait glasses. Sprinkle cookie crumbs over top, reserving a tablespoon or so for garnish.
  4. Divide the remaining cappuccino cream on top of the cookie crumbs and chill at least 3 hours and until you are ready to serve.
  5. To serve, place a small dollop of topping on the parfait, garnish with a light sprinkling of cookie crumbs.

These were delicious parfaits!!! Used real rum and some butterscotch pudding I had. They turned out perfect for a hot Summer night!! I only made two (as I had big dishes) and had no problem eating the whole thing!!! :) Thanks Toni!

I prepared these parfaits for dessert after our annual steak and lobster New Year's eve dinner. I used a regular vanilla pudding mix, 2% milk and a teaspoon of Khalua, it was very good and enjoyed by all! Next time I will use espresso coffee for a stronger flavour. Nice easy recipe Toni!

This is very, very, very good!!!!! I am a coffee lover and this was a perfect dessert for me. I used chocolate cookies that I made and of course crumbled up, 2% milk as that is what is on hand, and no alcohol. I lved it as is but of course went back for 2nd's and then added a dollop of Chocolate Mocha Ice cream and then the whip cream. DELICIOUS! I am saving this (in cookbook) for my dessert for Christmas when my B-I-L comes into town as every year I have to come up with a new chocolate dessert for him. He will go nuts over this as he loves his coffee after dinner. Thank you Toni for posting this. (I am going to try this with other flavors of coffee, just to be sure LOL and make it a few times before the holidays.) One-Two-Three Hit Wonders
