Cap City Diner Meatloaf

  • Heat oven to 325 degrees.
  • In skillet, saute mushrooms and onions in olive oil until tender. Set aside.
  • In large bowl, combine meats, egg, bread crumbs, herbs, garlic, and cream. Mix well.
  • Add mushroom and onions. Add 2 TB of barbecue sauce. Add remaining ingredients; mix thoroughly.
  • Place mixture in a loaf pan, pushing down firmly to pack meat into place. Cover with foil. Bake for 50-60 minutes.
  • (Optional) Remove foil; cover meatloaf with desired amount of barbecue sauce. Cook uncovered for an additional 10-15 minutes. Serve with barbecue sauce.

  2. I can't resist ordering the meatloaf at Cap City every time I go there! so I was very excited to see the recipe and try it! Like others, I did not have the veal so added extra pork. I made the Cap City BBQ (yummy!) and, I made the onion straws to complete the recipe. I plated it just like Capy City with the meatloaf on the bottom follwed by the mashed potatoes on top, drizzled the bbq sauce and topped with the onion straws. Everyone loved it! Thanks for a great recipe!!
     
  3. Best Meatloaf I've ever had. I could not find ground veal so I just added more ground sirloin. I also could not find shiitake mushrooms so I used gourmet white and cut them into small thin pieces. I topped this off with Montgomery Inn's BBQ Sauce and think that was a perfect match.
     
  4. This is without a doubt the best meatloaf I've ever tasted and totally deserves more than 5 stars. The store was out of shiitakes so I used baby bellas and replaced the veal with more pork. Also used dried herbs (1/2 tsp each). Love the <a href="/140992">Cap City Barbecue Sauce</a> (but I should - I posted it! lol) I've not had the original meatloaf at Cap City Diner so can't compare but if it's even half as good as this, well... Thanks for a *wonderful* recipe!
     
  5. Yum! This is a great meatloaf recipe. Every bite offers a piece of mushroom and lovely flavor -- and I used ground turkey. I bet it's even better with the listed meat ingredients. I went the optional route with barbecue sauce (Open Pit original) on top. And the sandwiches the next day were even better than the first serving of the dish. Love those meatloaf sandwiches! Tweaks

  1. I had to substitute sliced button mushrooms, coarsely chopped. Could not find ground veal- so i increased the Ground Beef to 1.33lb and increased the Ground pork to 1lb. I increased the onions to 1/4 c. And, i used ketchup instead of BBQ sauce. Deelicious. ????from Dee
