This recipe is from the "Great Tastes - Healthy Cooking From Canyon Ranch" cookbook. This is being posted for the strawberry swap.
- In medium bowl, combine pineapple, strawberries, grapes and blueberries.
- Add juices and mix well.
- Cover bowl and refrigerate.
- To serve, spoon into bowls and garnish with pepper and orange segments.
Fresh, tasty and quick.
Now this is my kind of 'gazpacho' ~ ABSOLUTELY WONDERFUL! I was going to leave out the pepper but included it at the last minute & am glad I did, as it gave the fruit soup just enough of a change as to make it special! Thanks for a great keeper!
