  1. Place the ricotta, sugar, chocolate, orange rind and vanilla in a large bowl. Use a wooden spoon to mix until well combined.
  2. Spoon the ricotta mixture into a piping bag. Select nozzle that will fit inside cannoli shell. Pipe the ricotta mixture evenly into the cannoli shells.
  3. Arrange 2 cannoli on each serving plate. Dust evenly with icing sugar and serve immediately.
