Garlicy beans, great side dish
- 16 ounces cannellini beans, rinsed
- 1⁄2 cup grape tomatoes, diced
- 1⁄2 cup frozen spinach
- 2 tablespoons olive oil
- 3 garlic cloves, minced
- 1⁄2 yellow onion, chopped
- Sautee the onion and garlic in olive oil until tender.
- Add beans and mash a few with a fork; cook for 1-2 minutes.
- Add spinach and tomatoes; sauté until spinach is thoroughly cooked.
Good...also good to try adding some thyme to give it some additional flaver
