This is a very good recipe for cranberry cakes. You can use white chocolate chips which gives it a different flavor and, I think more compatible with cranberries. The cans have to be sprayed with a baking product or the bottom lined with waxed paper. a

My husband and I just made these and and the cans overflowed with batter and we greased the cans a lot but it still wasn't enough. They are all stuck in the cans. Followed the recipe exactly. The taste of the cake is very good. If I try this again I will make them in my mini loaf pan and see if that makes a difference. They taste very good but what a mess to get out of the can. Sorry.
