These were great! I was a little concerned that they would be too crisp for my family (they all like chewy cookies) but the texture of these cookies was wonderful. They just melt in your mouth. After baking, the crushed peppermints looked like pink dust on the cookies-so pretty and Christmasy. Also, the peppermint flavor wasn't too over powering. Thanks for sharing! I'll be adding these to my Christmas baking every year.

Well, maybe "delicate" cookies aren't my forte. About 1/2 of the cookies disintegrated as I was trying to get them off the pan- the larger pieces of candy stuck to the pan and messed up the whole thing. The flavor of the cookies that came off was good, but a little too greasy for our tastes. Maybe more rolled oats would give these more body?

These pretty cookies stood out at my church cookie exchange. They were very good - both crispy and chewy yet with a shortbread texture too. I used real vanilla as you suggested but it seemed to be competing with the peppermint flavor so I will try these again without the vanilla and maybe a touch of peppermint oil. Also, I loved the taste of the oats but not the texture. I will try these again and run the oats through the food processor. My DD has already crushed the candies so we'll be making them again soon. Thanks!
