Scaled this back for 2 serves (the DM and I) and as we don't get Splenda brown sugar blend I used a tablespoon of brown sugar, unfortunately a gremlin had been in the fridge and eaten all the oranges so couldn't add the zest which I think would have made all the difference and defrosted some freshly squeezed orange juice I had frozen but think less may have been better as it was swimming in it, thank you Annacia, will try again with zest and less juice, made for Everyday A Holiday.

I made this for my daughter and I for lunch today. Tagged thru the Photo Forum March Challenge. It is a very tangy dish. I wish I had added a bit more cinnamon to the mix and a bit less orange juice as the OJ overpowered the yams (next time I'm using freshly squeezed instead of purchased juice). Very nice dish overall! I wasn't about to wait for the winter holidays to come around again just so I could try this recipe, AND I'm glad I didn't! Followed the recipe right down the line, [although I do use orange zest GENEROUSLY!], & I was extremely happy with the results! Oh, yeah, I also did not peel the steamed yams since I want all the nutrients I can get! Thanks for posting this recipe, Annacia ~ it goes into my Yuletide book as well as my vegetarian one!
