For years my mom made canned yams and baked them with marshmallows on top. This was my first experience with fresh yams and I became a convert (no more canned for me!!!) It of course is a great side dish to turkey on Thanksgiving.

This was good since I was in a hurry to make a yam dish for Christmas today. I left out the lemon as well (since it didn't seem to be popular in other reviews) and did 1 c of brown sugar. This is a bit juicy/saucy for me, the way it came out. But the flavor was good. Next time I think I'll put in only 1/2 tsp of nutmeg. I also added 1 tsp of cinnamon, but I'd probably only do 1/2 tsp of that next time as well. I threw marshmallows on top as well. Overall it was a hit, so I'll probably use it again since it's quick! - 3 yams (peeled and thinly sliced)
- 1⁄4 cup margarine
- 3⁄4-1 1⁄2 cup sugar (depending on how sweet you want it)
- 1⁄2 teaspoon salt
- 1 teaspoon vanilla
- 1⁄4 cup water
- 1 lemon, juice of (approx. 1 Tablespoon)
- 1 teaspoon nutmeg
