Candied Yams

For years my mom made canned yams and baked them with marshmallows on top. This was my first experience with fresh yams and I became a convert (no more canned for me!!!) It of course is a great side dish to turkey on Thanksgiving.

This was good since I was in a hurry to make a yam dish for Christmas today. I left out the lemon as well (since it didn't seem to be popular in other reviews) and did 1 c of brown sugar. This is a bit juicy/saucy for me, the way it came out. But the flavor was good. Next time I think I'll put in only 1/2 tsp of nutmeg. I also added 1 tsp of cinnamon, but I'd probably only do 1/2 tsp of that next time as well. I threw marshmallows on top as well. Overall it was a hit, so I'll probably use it again since it's quick! Thanks for sharing.

Ingredients Nutrition

  • 3 yams (peeled and thinly sliced)
  • 14 cup margarine
  • 34-1 12 cup sugar (depending on how sweet you want it)
  • 12 teaspoon salt
  • 1 teaspoon vanilla
  • 14 cup water
  • 1 lemon, juice of (approx. 1 Tablespoon)
  • 1 teaspoon nutmeg

Directions

  1. Melt 1/2 of the margarine in a large pan.
  2. Add the yams, sugar, salt, vanilla and water.
  3. Cover and simmer 20 minutes or until tender.
  4. Stir in the rest of the margarine, nutmeg and lemon juice.
  5. Cook 10 minutes without the lid.
