Not the typical sweet potato recipe...A holiday must have at my house, even my SIL is becomming a fan...
- Cook the potatoes, I steam mine.
- Cool and peel, slice about 1/2 inch thick layer in a large casserole dish.
- Melt butter and mix in the apple juice and honey to make a syrup.
- Preheat oven to 325
- Pour the syrup over the potatoes and bake, basting occasionally till the syrup is absorbed and the potatoes are brown. Serve with gravy, yum!
