  • Preheat oven to 350 degrees Fahrenheit.
  • Whip the egg white, the sugar, and the vanilla in a large bowl. Add the pecans in the bowl and lightly toss. You want it to look as though there might not be enough mixture to coat the nuts; as little liquid as possible.
  • Spread nuts into a single layer on a cookie sheet. Toast for ten to fifteen minutes, checking often so the nuts don't burn. Let cool; store in a zip-lock bag.
