Candied Grapefruit Peel

- 2 grapefruits
- 1 cup sugar
- 1⁄2 cup light corn syrup
- 1 cup water
directions
- Remove peel in lengthwise sections. Cover with cold water; boil for 5 minutes. Drain. Repeat three times. Dry well on paper towels. Cut peel into 1/4 inch strips. Combine sugar, corn syrup, and water in saucepan. stir over low heat until sugar is dissolved. Add peel and bring to a boil. Cook over low heat about 40 minutes until most of the syrup is absorbed. Drain off excess syrup. Roll peel a few pieces at a time in granulated sugar. Let dry for 24 hours on a wire rack. Store in a covered container.
