    Directions:

      Take peel(make sure that no white part is on the peel, it's the bitter part) from 3 grapefruit and cook 5 minutes in water.

      Drain and repeat twice.
    3. 3
      Cut peel into strips (scissors work well).
    4. 4
      Cook peel gently in corn syrup until most is absorbed and the peel is shiny.
    5. 5
      Watch carefully as it can burn.
    6. 6
      Drain, cool, roll in granulated sugar.
    7. 7
      Lay out on cookie sheet to dry.
    8. 8
      Will keep in a tightly covered jar a long time.

      These candied grapefruit peel are so good. I have made them lots of times before,But, this recipe is easier. Thank you Sharon.

      Made using a grapefruit, orange, and lemon. While the lemon was good, only some of the orange and grapefruit were good. Had some issues with how to get all the white pithy part and not have it too thin. Also had issues with the ingredients calling for a cup of water, so ended up adding it to the corn syrup. Based my review on the part that turned out as I think the part that did not turn out may have be my lack of skill in making this kind of candy.

      I did not give this any stars because it was more than likely my error these did not turn out right. I have never made candied peel before so I made them to specs yet was unsure if I was doing it right. I wasn't sure if rind meant peel to include the white part on the skin (Thanks so much for making the correction in the recipe since this review). I dried them on a rack, but they never seemed to dry thoroughly even after 3+ hours. I found the sweetness ended with an awfully bitter taste. I will have to try making them again soon. -Bird-
