This is a wonderful and fast recipe! I also did 1/2 cup water and 1/2 cup of sugar and it turned out great. After the limes cooked for about 2-3 minutes I dipped the them in sugar for the granulized look and put them on the cooling rack.
TIP, save and refridgerate any of the water/sugar combo left for a lime based simple syrup for cocktails!!
Good and easy. I used a 50/50 ratio of water to sugar and simmered a little longer. Put them on some parchment paper to cool and then right on my cake!
