This recipe is from the book, Campfire Cuisine, by Robin Donovan.
- Place banana on flat surface. With the banana still in its peel, make an incision lengthwise on the top of the banana through the length of the peel and the fruit leaving the underside uncut. Pull the sides of the banana apart and sprinkle chocolate chips inside.
- Wrap in aluminum foil and bake for 10-15 minutes on high heat until the fruit is hot and soft and the chocolate has melted. Discard the foil and pull sides of the banana apart. Sprinkle coconut over melted chocolate and serve with spoon.
- Serve hot.
