This casserole was an absolute delight. The colours were beautiful, and I thoroughly enjoyed all the interesting flavours. WOW is right! I sauted my red pepper with the garlic and half an onion before it went into the casserole dish. So easy to make, and I appreciated the healthy low-fat aspect (I omitted the oil at the end as I used some to saute). The squeeze of lime is magic and all on a bed of brown rice. Thank you, ranch-girl, for posting. I will be making this again and again.

With all of these spices I expected more flavor. The taste is really original, but I don't think I'll be making this again. Thanks for posting it though.

WOW! This was soooo unique and different for me to make. Easy and fun, too. Hubby thought it needed a little more kick or spice - but then thought it would be great in a flour tortilla or over spaghetti squash. Lots of variations can be done with this one - adding spices, using pork instead of chicken (especially with the pineapple). Thanks for a great recipe! Made for PAC '08.

SO GOOD! I'm a vegetarian so I just used frozen veggie chicken. I also omitted the pineapple tidbits and just used about half a can of pineapple nectar since my husband does not like fruit in his savory dishes. It turned out great and was a huge hit! Will definitely make again!
