    I was sent this recipe and can't wait to try it. We love chicken and we're always searching for a new way to prepare. I am posting so I won't lose or forget it. Garnish with sliced avocado, chopped romaine lettuce, and sour cream. If you don't have cooked rice on hand, you can use Uncle Ben's Ready Rice. Cans of chipotles en adobo are available in the Mexican food section of most supermarkets.

      Adjust oven rack to middle position and heat oven to 450 degrees.

      Heat oil in large nonstick skillet over medium-high heat until just beginning to smoke. Add black beans, water, reserved salsa juices, chile, and adobo sauce and cook until liquid has evaporated and beans are soft, about 5 minutes. Add garlic and cook until fragrant, about 30 seconds. Using potato masher, mash beans lightly. Season with salt and pepper.

      Place rice in medium microwave-safe bowl, cover with plastic wrap, poke holes in plastic, and microwave on high power until hot, about 90 seconds. Stir in salsa, chicken, and 1 1/2 cups cheddar.

      Spread one-quarter of black bean mixture down center of each tortilla, leaving 2-inch border at ends. Mound rice mixture on beans and fold tortillas to form burritos. Transfer to baking sheet, sprinkle with remaining 1 1/2 cups cheddar, and bake until cheese is bubbly, about 10 minutes. Serve.

      Seriously yummy food! I kinda goofed up. I added the salsa to the smooched beans. I used great northern beans because black beans are not my friend. I added 1 small chipotle pepper and several teaspoons of adobo sauce. It could have used more. I would suggest starting out slow and keep adding more sauce until you get the desired heat. I then added more salsa to the rice, chicken & cheese. I decided to make some open face on corn tortillas for DH and several folder flour tortillas (photos taken w/o toppings). I topped with sliced romaine lettuce, sliced black olives and diced avocados. We also topped with some of our favorite verde sauces. The kids even liked 'em! SCORE! Thumbs up all the way around the table! Thanks for posting Cindi!

      This is a nice change up for a burrito. We arent rice people usually so that would be my only complaint is too much rice per chicken but thats just us. Otherwise the flavor is great! The chipotle pepper is SPICY tho, I wasnt sure if I should have seeded it the way I normaly would a jalepeno or not and it turns out maybe I should have. What a nice change to my usual way of making my black beans also, thank you so much for sharing this recipe, we will have it again for sure! Oh and I used brown rice to be healthier and to me it tastes the same as white.

      Thank you!!! I made this just because I had bought a rotisserie chicken and wasn't sure what to do with it. Husband said, "That was honestly the best burrito I have ever eaten. I can't wait to make the guys at work jealous tomorrow when I bring in left overs. There are leftovers aren't there??" Great taste. A bit of spice but not too overwhelming. Easy recipe to follow also. Didn't change a thing! Thank you, thank you, thank you!
