This made a nice, easy, high-protein, high-flavor and healthy dinner for us. BF went overboard with weightlifting today and lifted for about 2 hours straight, so he was seriously craving protein for dinner. I made 3 servings and he had two and we both loved it. I didn't have the green chiles, so I added about 1/2 a red bell pepper and a dab of Zhoug (#57689) to compensate for the loss of spiciness. You said in your intro that you could add meat, and I happened to have a lone cilantro sausage kicking around the freezer that we hadn't been able to figure out what to do with. It was perfect in this and made it a bit more of a substantial supper, but I think this would be just as good without. I used whole wheat tortillas. Delish and much easier than you might think. Thanks!

  1. Heat oven to 325*F.
  2. Wrap tortillas in foil and heat in oven for 5 to 10 minutes.
  3. In a medium nonstick skillet, heat oil over medium-high heat. Add green onions, chiles, tomato, salt and pepper; saute 4 minutes.
  4. Push mixture to side of pan.
  5. Sprinkle cheese over top of vegetable mixture.
  6. Add eggs and cayenne to skillet. Cook 1 to 2 minutes, stirring occasionally with spatula, until soft, creamy curds form.
  7. Stir vegetable mixture into eggs.
  8. Divide mixture among warm tortillas.
  9. Sprinkle with cilantro(or parsley),a tablespoon of salsa, and 2 tbls. cheese.
  10. Roll up tortillas. Enjoy!
