Caldo Verde (Portuguese Green Soup)

ingredients
- 14.79 ml olive oil or 14.79 ml vegetable oil
- 1 large yellow onion, finely chopped
- 2 garlic cloves, minced
- 828.06 ml low sodium chicken broth
- 3 medium potatoes, peeled and chopped
- 283.49 g package frozen chopped spinach, thawed
- 170.09 g turkey kielbasa, sliced (Polish sausage)
- 1.23 ml salt
- 1.23 ml black pepper
directions
- In a large saucepan, heat the oil over moderate heat. Add the onion and garlic and cook for 5 minutes or until onion is tender.
- Add the broth and potatoes. Bring to a boil. Lower the heat and simmer, covered, for 30 minutes or until potatoes are very soft. Using a potato masher or large spoon, slightly mash potatoes to thicken soup.
- Stir in the spinach, kielbasa, salt, and pepper. Simmer, uncovered, for 5 minutes more until heated through.

This soup is a result of when Portuguese marries Polish! I grew up on Caldo Verde and very much like this version too. This soup is warming to the belly, spirit, and soul, what could be better than that! Because kielbasa replaced Portuguese linguica (or chourico), I added a touch of Portuguese hot sauce (pimento moida), not to make it hot, but to give that slight background. To save on carbs, used one potato and added dried skinned fava beans that were cooked until soft which is a very Portuguese thing. Dried fava beans provide great nutrition, flavor, and replaced some of the creaminess that the additional potatoes would have provided. Very much enjoyed this soup and can’t wait to have it again. I forgot to add the spinach before this photo! I am so sorry! One of those crazy days! After we ate the soup I asked myself.. "Why is it called Caldo Verde? OMG!!! I forgot the spinach!" This made a fabulous soup! I did add some spinach to the leftovers and then reheated but then I forgot to take a photo! boy do I feel dumb! Thank you for a great and healthy recipe!
