Nice light calamari rings--not to fatty.
- 150 g fresh squid rings
- 2 teaspoons flour, seasoned with
- salt & pepper
- salad mixed vegetables
- 3⁄4 cup cooked rice, seasoned with
- 1 teaspoon grated lemon rind
- lemon wedge, to serve
- Toss the calamari rings in flour.
- Heat a small non-stick frying pan over high heat.
- Add calamari and cook for 2 minutes.
- Serve with veggies, lemon rice and lemon wedges.
