- 4 zucchini or 4 yellow squash
- 1 large onion, chopped
- 3 tablespoons oil
- 1⁄4 teaspoon garlic salt or 2 garlic cloves, minced
- 4 ounces green chili peppers, chopped
- 16 ounces whole kernel corn
- 1 cup cheddar cheese, grated
- Saute squash and onion in oil until barely tender.
- Add garlic salt (or fresh garlic), chilies, corn and cheese; mix well.
- Put in a buttered 1-quart casserole.
- Bake at 400 degrees Fahrenheit for 20 minutes.
