Cake That Doesn't Last!

"I found this recipe written on a piece of paper that was tucked in the middle of one of my SIL's cookbooks. I have no idea where she got it from. The ingredients resemble that of a "Hummingbird Cake"."

  • Mix dry ingredients in bowl.
  • Make a well in center of the combined dry ingredients and add eggs, pineapple, oil, vanilla and bananas; stir.
  • DON"T BEAT!
  • Pour into greased tube pan.
  • Bake at 350 degrees for 75 minutes or until cake tester inserted comes out clean.

  1. I've been making a similar recipe like this one since 1961, but instead of mashing the bananas, I dice them and I only use 8 oz of crushed pineapple. Cool the cake without removing from the pan. We just sprinkle powdered sugar on the top.
     
  2. I first got this recipe from a friend's mom after she served it to us for breakfast, baked in a 9x13 pan with no frosting. Since 1974, this has been a favorite of family, friends, and even customers when I had a baking business, and I think I've made it hundreds of times! Like most, I've reduced the oil to 3/4 cup and the sugar to 2 cups. It's the same as Hummingbird Cake, but I still often call it A Cake That Doesn't Last--because it doesn't!
     
  3. This is a very nice cake .. I cut back on the oil (added milk) and sugar .. I used a cup of oil but next time I will use even less as I thought it was heavy .. Thanks for posting!
     
  4. the flavor of this cake was wonderful, but it was a bit heavy...kind of a bit like banana bread texture..lol..I think maybe I should add a bit more b.powder next time Insha'Allah other wise it was really nice

I am a busy single mom of 5 growing boys!! My children's ages are 21,18,14,12 and 10 1/2. In my spare time,when I have any, I try to walk 3 miles a day.I like to read Woman's World and inspirational books and if I didn't have 5 beautiful boys to care for, I would probably be doing missionary work. I live in the beautiful Okanagan Valley in British Columbia and I swear we must be living in Heaven on earth!!!I would love to travel if I had the resources and time with Brazil and South America being on the top of my list of places to see.
