YUMMY YUMMY YUMMY! I will absolutely GORGE myself on these. Which is why the servings are for 3 but there are only 2 of us.

Ingredients Nutrition

  • 3 pork chops, about 1 inch thick
  • 1 -2 tablespoon oil (I use a blend of canola and veggie)
  • 12 teaspoon salt
  • 12 teaspoon cayenne pepper (I have also used a cajun blend such as Tony Chachere's)
  • 34 cup dry white wine
  • 12 cup bell pepper, chopped
  • 12 cup onion, chopped
  • 1 clove garlic, chopped
  • 1 12 tablespoons soy sauce
  • 12 cup pineapple chunk (reserve some of the juice, about 1/2 cup?)

  1. Use salt and cayenne to coat chops.
  2. Heat oil in a large skillet.
  3. Add chops and brown slowly.
  4. Add wine, bell pepper, onion and garlic.
  5. Cover and simmer for 25-30 minutes.
  6. Remove pork chops (keep them warm).
  7. Add soy sauce and reserved pineapple juice.
  8. Stir and allow to simmer for 10 minutes.
  9. Add pineapple chunks and pork chops.
  10. Bring to a boil, turn off heat.
  11. Serve over rice.

Excellant pork chops Kari!! I just did 2 pork chops, quite big though. Instead of the cayenne pepper I used the Cajun seasoning and doubled it. Cut back just slightly on the green pepper, onions, and the soy sauce, but used 2 cloves of smashed garlic. These were exceptional, nicely finished with the pinapple chunks and the wine added wonderfully to the combination of flavours. These will be a regular in our house, thanks for sharing.

Excellent recipe and the pork chops were so tender and the sauce was great. I doubled this recipe for my family. DH said it was a bit to spice hot for him. So the next time I'll put the salt and cayenne pepper into a salt shaker to season his chops, lightly.

my bf likes pineapples so i'll attempt this again, but it lacked oomph and the peppers and onions were overdone. i used tony's and sesame oil, but otherwise followed the recipe. next time i'll add the veggies later and perhaps some chili oil.
