      Mix all ingredients except pork and store in an airtight container.

      Prepare medium-hot fire and grill chops over indirect heat for 5-6 minutes on each side.

      We loved these chops! They were so easy to make and very fast cooking. I LOVED the spice combination. I will decrease the amount of cayenne next time because it was a bit too hot for my whole family. Thanks for a great grilling recipe!

      These have a wonderful kick and are so easy to put together. The chops were allowed to rest for about 10 minutes prior to placing on the grill. The amount of seasoning was perfect for the large cut chops used. Made for *ZWT 5*

      These were good. After making a couple of similar regional recipes this week I've decided I don't like thyme in cajun or caribbean recipes though, so from now on I'm going to leave it out. My DH thought these were a little too spicy for him but I dipped mine in a cool sour cream/ranch/honey mustard dip (my own concoction) and it tasted great like that! Only change I made was using pork tenderloin, cut into medallions instead of chops since I always worry about chops ending up tough. I think these would taste great with bbq sauce brushed on while cooking too, so I think next time I'll follow Leslie's lead and try that. Made for ZWT5.
